This is what I made for dinner a few days ago... I didn't really get the recipe from anywhere, I just made it up myself! It is very filling too since I used whole wheat pasta... I was so full after eating one bowl of it.
Ingredients:
For the meatballs:
- 450 g ground turkey meat
- 1 egg
- palmful of breadcrumbs (around 1/4 cup)
- a pinch of dried oregano
- 2 tbsp olive oil
- 4 spring onions (or 1 medium white onion) chopped
- grated cheddar cheese (amount depends on how much you like)
- salt & pepper
- 2 tsp paprika powder
- ketchup (optional)
For the pasta:
- whole wheat pasta
- spinach leaves
1. Preheat oven to 375 deg F
2. Combine all ingredients together for turkey meatballs
3. Roll mixture into small round balls and place them on a foil lined baking sheet
4. Place in oven to bake for 20-25 mins
5. For pasta, salt some boiling water in a pot and add the whole wheat pasta
5. Cook until al dente (or until desired tenderness is almost reached)
6. Add washed spinach leaves to the boiling pasta towards the end so it wilts, but doesn't cook down too much.
7. Drain pasta
8. Serve in a dish and splash some olive oil and lemond juice over top
9. Add turkey meatballs on top at the end
