This is what I made for lunch today! I've been having a craving for mozzarella sticks, but the ones in the restaurants are always deep fried! So I thought, I'd make them myself :)
Ingredients:
- Good quality Mozzarella (either ready cut cheese sticks, or buy a block and cut them by hand) ; keep in fridge until ready to use.
- Bread crumbs
- Dried rosemary leaves
- Dried parsely
- 1 clove of garlic
- 1 egg
- Salt & Pepper
1. Preheat oven to 350F
2. In a small bowl, whisk one whole egg with grated/crushed clove of garlic
3. In a separate dish, mix one cup of breadcrumbs with some rosemary leaves, parsely, salt and pepper.
4. Take mozarella sticks and coat them with egg mixture first, and then roll in breadcrumb mixture until well coated.
5. Place on baking sheet, and bake in the oven for approx. 5 minutes (but make sure the cheese doesn't completely melt out of the breading.
6. Serve with marinara sauce, or tomato sauce.
Enjoy!

I am going to try this out today! DO you have a recipe for the vegetable layed dish? That looks so good as well!
Yes of course! The vegetable dish is actually my mum's recipe and I make it more often than the mozzarella sticks, so it works every time!
For 4 pieces, you will need:
- 8X8 baking dish
- 3 Zucchini peeled and sliced into very thin strips (with a food processer which has that special slicing attachment, but if you're unlucky like me and don't have one then just use a vegetable peeler... it takes longer, but same effect!)
- around 5 medium carrots (also peeled and sliced)
- dried parsley
- dried oregano
- paprika powder
- olive oil
- S/P
- grated cheese on top (optional)
1. Preheat Oven to 230 C/450 F
2. Start by spraying some olive oil at the bottom of the dish, and layer some zucchini at the bottom
3. Take some of the carrots and layer on top
4. Spray with Olive oil, S/P, herbs and paprika
5. Repeat with remaining zucchini and carrots until you reach the top.
6. Top the final layer with the olive oil, spices and grated cheese if you like
7. Cover with foil, and bake in the oven for approx. 30 mins
Enjoy!! Hope this helps :)
